500g South African Flavorking plums, halved and pitted
300g South African apricots, pitted and quartered
2 South African pears, cored and sliced
2 South African peaches, pitted and sliced
300ml unsweetened apple juice
30g light muscovado sugar
50g sultanas or raisins
1 cinnamon stick
A generous pinch of ground nutmeg
300g Greek yogurt
2 tsp freshly grated root ginger (peeled)
1 tsp finely grated lemon zest
2 tsp clear honey
Lemon zest and a little ground nutmeg, to serve
1 Put the plums, apricots, pears and peaches into a large saucepan with the apple juice, muscovado sugar, sultanas or raisins, cinnamon stick and ground nutmeg. Simmer gently for 8-10 minutes. Cool until just warm, then remove the cinnamon stick.
2 Put the Greek yogurt into a serving bowl and stir in the ginger, lemon zest and honey.
3 Serve the warm fruit salad with the Greek yogurt mixture, sprinkled with a little lemon zest and ground nutmeg.
